Snow! and P31-Day 11

I am so sorry for not keeping up with Project 31 like I wanted to.
It just got a little crazy around here with school and work going full swing.

I have been cooped up in my house the past two days because of snow and ice!
It has been rather nice. School and work have both been cancelled. I've gotten to have some fun with friends watching movies and playing the Wii. My roommate Kari and I even went out in the snow in our swimsuits in 12 degree weather. It was pretty humorous.


With that said: Here is My Day 11 post. Since it is cold outside, I'm going to cook dinner!

What's cooking tonight?
Veggie Lasagna. Yum!

I kind of just went with it and made it up as I went...

Ingredients:
Wheat Lasagna Pasta ( I had the kind you have to boil first)
Squash
Eggplant
Mushrooms (unfortunately I had to use canned)
Tomato Sauce
Ricotta Cheese
Shredded Cheese
Olive Oil
Garlic Powder
Salt
Pepper

Here's what I did:
I cut up the eggplant and squash and put them on greased cookie sheets.
I then mixed garlic powder and olive oil together and brushed it over the veggies.
I put it in the oven and let them cook for 15 minutes at 400 degrees.


While the veggies cooked I started boiling the pasta.

After the squash and eggplant cooked, I took them out and flipped them over. I then put salt and pepper on the other side and put them back in for another 15 min.

While the veggies were in the oven a second time I prepared the casserole dish by spraying cooking oil and spreading a little tomato sauce on the bottom of the dish. Then, I put the first layer of pasta down. I then put tomato sauce and mushrooms on the first layer. I put another layer of pasta with a ricotta cheese layer. The next layer I put the squash and eggplant. I put tomato sauce and cheese on the top layer. I put it in the oven for about 20 min and voila! Veggie Lasagna!

I was really surprised that it turned out so good. :)
