Birthday Week!

This past week on Tuesday we celebrated Kendall's birthday! We celebrated together Tuesday and with friends on Friday. I stayed up into the wee hours of the morning making him a cheesecake (his favorite) and getting a little birthday surprise together for him.

His main birthday present:

Meet our newest addition to our tribe, Benaiah Johnson. Our little fur baby! 
He is a Rhodesian Ridgeback and as of August 25, he is 6 months old and weighs 60 lbs.
He is going to be a GIANT.
Kendall has really been wanting this breed of dog
so I got him one for his birthday about 3 weeks before the actual day.
He is really such a joy to have around the house and always 
makes us laugh. He is also a good protector which is nice 
when I am at the house by myself. :)
Ohh and if you can't tell, he is the BEST cuddlier!

I am so blessed to be your wife Kendall. I love spending everyday with you and living life together. You make me happy beyond words and even when life gets hard, I am glad it is you who is fighting by my side. I am looking forward to many more birthdays by your side and pray that you are blessed. Thank you for providing for me and working hard to support us. Thank you for your dreams and visions and leading this tribe to the best of your ability.

Here is the recipe for the cheesecake. Kendall brought it to work and everyone loved it. It was delicious!

Strawberry Cheesecake Recipe:


  • 1 1/4 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/3 cup butter or margarine, melted
  • 2 (10 ounce) packages frozen sweetened strawberries, thawed
  • 1 tablespoon cornstarch
  • 3 (8 ounce) packages cream cheese, softened
  • 1 (14 ounce) can sweetened condensed milk
  • 1/4 cup lemon juice
  • 3 eggs

1. Combine graham cracker crumbs, sugar and butter. Press onto the bottom of an ungreased 9-in. springform pan. Refrigerate for 30 minutes.

2. In a blender or food processor, combine strawberries and cornstarch; cover and process until smooth. Pour into a saucepan; bring to a boil. Boil and stir for 2 minutes. Set aside 1/3 cup strawberry sauce; cool. Cover and refrigerate remaining sauce for serving.

3. In a mixing bowl, beat cream cheese until light and fluffy. Gradually beat in milk. Add lemon juice; mix well. Add eggs, beat on low just until combined. Pour half of the cream cheese mixture over crust.

4. Drop half of the reserved strawberry mixture by 1/2 teaspoonfuls onto cream cheese layer. Carefully spoon remaining cream cheese mixture over sauce. Drop remaining strawberry sauce by 1/2 teaspoonfuls on top. With a knife, cut through top layer only to swirl strawberry sauce. 

5. Bake at 300 degrees F for 45-50 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove side of pan. Thin chilled strawberry sauce with water if desired; serve with cheesecake. Store in the refrigerator.

Note: I used nonfat cream cheese. Also, the "strawberry mixture" was wayyyy to much because we didn't use it as a topping. I would've rather used fresh strawberries. I would half the amount of strawberries used because I only used about 1/3 a cup for the swirls in the cheesecake.
